Breakfasts are generally a mad dash.  Especially is this true when you have a houseful of school-age kids and you and your spouse work outside the home.  Thus, it is often the case that breakfast foods are nothing more than packaged foods reheated.  But for those of us who want to scrap the processed foods and prepare nutritious foods, it is nice to brush up on recipes which are easy, quick, healthy and kid-friendly.  Here are some ideas:

Frittatas

Frittatas are the easier versions of omelets.  The basic procedure is to cream up the eggs with milk or cream and add just about anything you have—hotdogs, flour, cheese, green beans, sauce, salsa, rice pilaf or cooked pasta—and cook either in the oven, microwave or in the pan.  Frittatas are in fact the perfect excuse for using up leftovers.

Crockpot Breakfast Recipes

Imagine waking up to do nothing more than simply serve piping hot breakfast straight out of the crockpot.  It takes nothing more than assembling the dish the night before and letting the crockpot do the cooking the whole night while you just avail of your beauty sleep.  With this nifty kitchen gadget we call crockpot, you can whip up casseroles, cobblers and other breakfast delicacies.

Quick Breads

Muffins, cupcakes, coffeecakes, cheesecakes and breads are ideal breakfast fare.  They can be made ahead during the weekend, are handy enough for on-the-go snacks or lunch packs, can be sneaked in with fruits and herbs, and can be conveniently cooked in bulk and stored.  And with nothing else but hot cocoa or coffee to pair it off with, breakfast is complete!

Overnight Breakfast Casseroles

If you would prefer staying up late rather than waking up early to prepare your breakfast, then overnight breakfast casseroles are perfect for you.  Soufflés, baked pasta and baked strata are some of the most sumptuously filling breakfasts you’ll ever have.

Pancakes, Waffles and French Toast

Pancakes and French Toast are the quintessential comfort foods for breakfast.  They are also some of the quickest to make.  With pancakes and waffles, for instance, you can prepare ahead your own pancake mix and just add the liquids in the morning.

Sandwiches and Burgers

Pre-cooked patties can simply be popped into the microwave in the morning and paired with all the essential trimmings of burgers and sandwiches—bread, sliced cheese, tomato slices, cucumber rounds, shredded carrots, torn lettuce and dressing—to make very hearty and quick breakfast items.
