Favorite New Year Main Dishes—Restaurant-style Prime Rib Roast and Honey-Garlic Glazed Meatballs


Restaurant-style Prime Rib Roast

The most tender, succulent roast will greet you this New Year with this prime rib roast coated with herbed flour.  The crispy crust and the juicy core are just so, so good.

Prep time: 10 minutes

Cook time: 2 hours

Yield: 14 servings

Ingredients:

  • 1 (14-pound) roast-ready prime rib roast (with the ribs cut off and tied to the roast)
  • ¾ cup all-purpose flour
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon celery seed
  •  

Directions:

  • Allow the prime rib to come to room temperature, about 3 hours, depending on the size of the meat.
  • Preheat oven to 425 degrees F and line a roasting pan with aluminum foil.
  • Place the roast on the roasting pan and blot-dry with paper towels.
  • Into a small bowl, sift together the flour, pepper, salt, paprika, onion powder, garlic powder and celery seed.  Coat the roast evenly and thoroughly with the flour mixture.
  • Roast meat in the preheated oven for about 4 ½ hours for medium-rare and longer for more doneness.  Be sure the internal temperature reaches at least 120 degrees F.
  • When done, remove roast from the oven and wrap with aluminum foil.  Allow to rest for about 30 minutes to 1 hour before slicing.

Honey-Garlic Glazed Meatballs

Baked (not fried) meatballs wallow in a thick, sweet and spicy sauce for a main dish that’s sure to fill and delight you this New Year.

Prep time: 25 minutes

Cook time: 15 minutes

Yield: 22 servings

Ingredients:

  • 2 eggs
  • ¾ cup milk
  • 1 cup dry bread crumbs
  • ½ cup finely chopped onions
  • 2 teaspoons salt
  • 2 lbs. ground beef
  • 4 garlic cloves, minced
  • 1 tablespoon butter
  • ¾ cup ketchup
  • ½ cup honey
  • 3 tablespoons soy sauce
  •  

Directions:

  • Preheat oven to 400 degrees F.  Lightly grease 1x5x10-inch baking pans.
  • In a large bowl, combine the eggs and milk and add in the bread crumbs, onion and salt.  Crumble the beef over the mixture and mix well.  Shape the mixture into 1-inch balls and arrange on the prepared pans. 
  • Bake the meatballs uncovered for about 12 to 15 minutes or until the interior meat is no longer pink.
  • In a large saucepan over medium heat, sauté garlic in butter until tender.  Stir in the ketchup, honey and soy sauce.  Bring the mixture to a boil.  Reduce heat and simmer for about 5 minutes.
  • Drain the baked meatballs and add to the simmering sauce.  Cook for 5 minutes more, stirring gently to coat the meatballs with the sauce.
