Easy, Make Ahead Crockpot Breakfast Dishes

Set the alarm clock a little later than usual, knowing you already have piping hot breakfast ready for the eating. This duo of crockpot breakfast meals is the best way to greet your family a good morning. Spend a little time prepping the dish just before going to bed each night and you’ll wake up to the enticing aroma and fresh taste of homemade meals in the morning.
Southwest Crockpot Breakfast
You’ll sleep dreaming about this hearty, filling and oh-so-yummy egg dish with the bite of chiles and peppers. This dish is guaranteed to kick your sluggish mornings to a vibrant start.
Prep time: 20 minutes
Cook time: 7 to 8 hours
Yield: 10 servings
Ingredients:
- 2 tablespoons butter
- 1 lb. bulk breakfast sausage, cooked and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 4-oz. can chopped green chilies (or jalapeno peppers), drained
- 2 ½ cups grated Monterery Jack or Pepper Jack cheese
- 18 eggs
- 2 teaspoons chili powder
- ¼ teaspoon cayenne pepper, if desired
- ½ teaspoon salt
- ¼ teaspoon black pepper
Directions:
- Lightly grease the interior surfaces of a crockpot with butter.
- Begin layering in the following order—sausage, meat, onions, peppers, chilies and cheese. Repeat the layering until all the ingredients are used up.
- In a large mixing bowl, beat the eggs with an egg beater or with an electric mixer. Pour beaten eggs over the mixture in the crockpot. Cover and cook on low for 7 to 8 hours.
- Serve with sour cream or with salsa.
Crockpot Cobbler
Start the day with the wholesome goodness of this apple cobbler which is cooked for you by your crockpot. Tender and luscious apples, robust and chewy cereal, and drizzles of honey and butter make this crockpot the best morning greetings.
Prep time: 15 minutes
Cook time: 6 hours
Yield: 4 servings
Ingredients:
- 2 cups tart apples, peeled and sliced
- 2 cups granola cereals
- 1 teaspoon cinnamon
- ¼ cup honey
- 2 tablespoons melted butter
Directions:
- Spray the interior of a 4-quart crockpot with non-stick cooking spray.
- Combine the apples, cereal and cinnamon in the crockpot and stir to mix thoroughly.
- In a small bowl, combine butter and honey together and drizzle over the apple mixture in the crockpot. Mix gently, cover and cook on low for about 6 hours, or just until the apples are tender.
